Puff pastry and phyllo dough are two important flaky doughs. Both are popular, delicious, and readily available in the freezer section of many grocery stores, but there are some key differences. To make sure you grab the right one for your culinary needs, it’s important to know a few things. What is puff pastry? Puff pastry, also called pâte feuilletée, is a laminated dough, a pastry dough that is formed by carefully layering butter and dough together, usually via folding and rolling the dough several times in a specific pattern. (This applies to quick puff too.) The layers become very thin, but not so thin that the butter blends into the dough.
